My Go To Cozy Bowl for Immune Support Comfort and Delicious Flavor
I love to eat with the seasons and that means my kitchen is constantly rotating through different cozy comforting meals. When the weather cools down you’ll find me making all kinds of soups from hearty stews to light broths. But truth be told, and no matter the season, there’s one soup that remains as a go to in this household and that is Ginger Turmeric Chicken Soup.
It is my ultimate healing soup packed with anti inflammatory ingredients immune boosting goodness and bold comforting flavors. Every time we come back from a trip and our immune systems feel a little run down this is the first meal I make. And if I ever feel a cold coming on I whip up a big batch and almost instantly I start feeling better.
Beyond its healing properties this soup is just plain delicious. The warmth of ginger, the earthiness of turmeric, and the nourishing chicken broth come together in the most comforting way. Plus it’s super easy to make using simple and wholesome ingredients.

And because you guys know I love to sneak protein in wherever I can I like to stir in a little cottage cheese at the end. It adds a creamy texture and extra protein without altering the flavor too much. If you’re not a cottage cheese person you can also add a scoop of Greek yogurt. Plain or vanilla usually works best for us!
Ingredients You Will Need
Serves 4 to 6
1 tablespoon olive oil or coconut oil (I always reach for olive oil since I have an allergy to coconuts but I didn’t want to leave coconut oil out in case this is your preference)
1 small onion (diced)
3 cloves garlic (minced)
1 tablespoon fresh ginger (grated)
1 teaspoon turmeric powder (or 1 inch fresh turmeric, grated)
2 large carrots (peeled and sliced)
2 celery stalks (chopped)
4 cups chicken broth (low sodium recommended)
2 cups cooked, shredded chicken (rotisserie chicken works great)
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon crushed red pepper flakes (optional for heat)
1 teaspoon lemon juice (for brightness)
1 cup spinach or kale (chopped, optional for extra greens)
¼ cup cottage cheese or 1 scoop Greek yogurt (plain or vanilla)
Fresh parsley or cilantro for garnish (I personally skip cilantro since I have that lovely genetic trait where it tastes like soap but for those who love it, here is this option)
How to Make Ginger Turmeric Chicken Soup
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 2 to 3 minutes until translucent. Stir in garlic, ginger and turmeric and cook for another 1 to 2 minutes until fragrant.
Add the carrots and celery stirring to coat them with the aromatics. Pour in the chicken broth and bring to a gentle simmer. Let cook for about 10 minutes or until the vegetables are tender.
Stir in the shredded chicken, salt, black pepper and red pepper flakes if using. Let simmer for another 5 to 7 minutes so the flavors can meld together.
If you’re using spinach or kale stir it in during the last 2 minutes of cooking - just until wilted. Then you can go ahead and squeeze in fresh lemon juice for an added burst of brightness and immune boosting vitamin C. 🍋
Remove from heat and stir in the cottage cheese or Greek yogurt. It will melt into the broth making it a little creamier while adding extra protein.
Ladle the soup into bowls garnish with fresh parsley or cilantro if you are one of the lucky ones who enjoys it and enjoy every nourishing bite.

Vegetarian version swap the chicken for tofu or more chickpeas and use vegetable broth instead.
Spice it up a pinch of cayenne or extra ginger can give this an added kick.
