🥯 The Breakfast Hack That’s Saving Us Time and Keeping Us Full
Lately my boyfriend and I have been looking for easy ways to make sure we’re actually hitting our calorie intake for breakfast. I don’t know about you guys but we’re definitely guilty of reaching for coffee first thing in the morning and skipping breakfast without realizing it, especially during the week. Part of overall wellness is lowering cortisol levels and starting the day with something nourishing makes a huge difference.
That’s why I wanted to share this make ahead bagel breakfast sandwich recipe. We’ve been loving these because they’re easy to prep, taste amazing, and actually keep us full. Plus you can freeze them and just reheat whenever you need something quick.
Side note, yes the foil is upside down, but I was already in too deep and decided to commit this journey. So here we are, lol. 😆
What You’ll Need - (Makes 6 sandwiches)
6 bagels plain everything whole wheat whatever you like
6 eggs
6 slices of bacon
6 slices of cheese cheddar American or your favorite
2 tbsp butter optional for toasting
Salt and pepper to taste
🥯 Step by Step How to Make Them
1. Cook the bacon
Heat a skillet over medium heat and cook the bacon until crispy
Drain on a paper towel and set aside
2. Cook the eggs
Crack the eggs into a greased skillet and cook them to your preferred doneness
For a more uniform shape bake them in a muffin tin at 350°F for 12 to 15 minutes
Season with salt and pepper
3. Toast the bagels (Optional but worth it!)
Spread a little butter on each half and lightly toast in a pan or oven for extra flavor
4. Assemble the sandwiches
Place a slice of cheese on the bottom half of each bagel
Add an egg a slice of bacon and then the top half of the bagel
5. Wrap and freeze
Wrap each sandwich individually in parchment paper or foil
Store them in a freezer safe bag or container for easy grab and go breakfasts
How to Reheat
Microwave Unwrap then wrap in a damp paper towel. Heat for 1 to 2 minutes on medium power
Oven Wrap in foil and bake at 350°F for 15 minutes to prevent drying out
Air Fryer Heat at 350°F for 5 to 7 minutes for a crispier bagel
🥑 Once reheated I love to add sriracha, salsa, avocado or guacamole for extra flavor and a fresh kick!
These have been such a game changer for us. It’s nice knowing that breakfast is already prepped and ready to go no more skipping meals or grabbing something that won’t keep us full. If you try these out let me know what you think. Would love to hear what variations you come up with!
